Starter Cultures
Our starter cultures, without declarable allergens, are indispensable for the production of spreadable and sliceable raw sausages using the natural maturing process or the quick ripening process. Reddening is improved, colour retention is stabilised and the cured flavour is enhanced. The pH value is controlled and the ripening process is activated.
